Watch José Andrés Discuss the Evolution of Cooking

Here's the most recent lecture from chef José Andrés' new food class at the George Washington University. In this session, Andrés takes on the craft of cooking, from the basic, fundamental ability to handle fire to the development of molecular techniques. He uses elBulli chef Ferran Adrià, his mentor, as an example of how to understand the concepts underlying food and the ability to understand subtleties in cooking. "We are a unique species," says Andrés, "and cooking our food is what distinguishes us from others." The last two Andrés lectures at GWU have included a joint presentation with restaurateur Danny Meyer and a general outline on his course. To the most recent video:
