Eataly Chicago Wire

Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Here's an interview with Lidia Bastianich in which she discusses Italian cuisine and the opening of the brand-new Eataly Chicago. On why Eataly opened in Chicago: "I think Chicago's a great city. Like New York, it's full of energy. To make 60,000 square feet work, you need a densely populated area to fill it, and for this concept to be effective, you need the space. " [CR]
