Coi chef Daniel Patterson recently stopped by Talks at Google to discuss his take on California cuisine, experimental dishes, and how an inside joke between Patterson and chef Massimo Bottura led to a signature dish. Patterson also speaks about how to best craft the guest experience amid a backlash for tasting menus. "I keep getting asked about the 'tyranny of tasting menus,' as if people are being shackled, dragged into these terrible places, these dungeons and being left to languish there for hours," Patterson says. "And I think it's true. A bad tasting menu is like a prison sentence. No one wants that." Go, watch:
