PBS's food show The Mind of a Chef has delved into everything from very-specific ingredients to regional dishes, but its latest episode chronicles the day-to-day of opening a new restaurant: Season two subject April Bloomfield brought cameras along as she prepared to open her revamped San Francisco restaurant Tosca Cafe. The Mind of a Chef follows Bloomfield and partner Ken Friedman to SF as they build out the space (Friedman advocates for legitimately leather banquettes) and sits in as Bloomfield and Tosca chef Josh Even test out early recipes.
The episode also includes a field trip to stored SF bakery Tartine (where Bloomfield calls baker Chad Robertson "a master at what he does... it's humbling"). The full episode of Mind of a Chef: Restaurateur is available online now; go, watch:
