Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

After going live on midnight on Thanksgiving, the Kickstarter for cocktail wizard Dave Arnold and Booker and Dax's blowtorch attachment the Searzall is already up to over $67,000 of its $80,000 with 24 days to go. Prizes for contributing include Searzalls, with added perks ranging from getting exclusive news on the product's development to spending a day with Dave Arnold.

Although the product is still in its final round of beta testing, the Kickstarter page says that the Searzall is being used in some New York City restaurants including: Momofuku, Del Posto, Gramercy Tavern, and wd~50. In the Kickstarter video below, Arnold explains how the Searzall works, David Chang demonstrates how to use it, and Daisuke Nakazawa (Sushi Nakazawa, NYC) explains why it works for his kitchen.
