Paul Kahan's newest Chicago restaurant Nico Osteria will debut tonight, and Eater Chicago has a first look at the full food menus, which focus on "regional Italian seafood." Among other dishes, chef Erling Wu-Bower will offer nine crudos, eight pasta entrees, and dishes like a Neopolitan-style ragu with swordfish meatballs.
