Last week NYC restaurateur Keith McNally of Balthazar released Schiller's Liquor Bar Cocktail Collection, a boxed set of cocktail instructions and recipes. And Eater NY has a great quote from one of the introductions: "Many of the bartenders I first hired were less interested in the simplicity of classic cocktails than adding their own 'twists' to them. (These were often the ones who called themselves mixologists.) I soon applied my own 'twist' by firing most of these bartenders." [Eater NY]
