Here are a bunch of videos from one of UCLA's Science of Food public lecture series, "The Science of Pie" with chef and founder of Momofuku Milk Bar, Christina Tosi, and baker and co-owner of several Los Angeles restaurants, Zoe Nathan. This was the first ever bake-off focusing on the scientific principles of baking, where Science & Food undergraduate students were challenged to make an apple pie. The pies were then taste-tested by Tosi, Nathan, and food critics Jonathan Gold and Evan Kleiman. Eater's Matthew Kang was there, and has the recap on what the two bakers touched on in their lectures.
