The pair meet for the 15-course tasting menu at Eleven Madison Park, where over the course of four hours, Richman collects advice from the centenarian and watches Rosen interact with Daniel Humm and Will Guidara. Writes Richman: "I realized our exit from the restaurant explained everything I hoped to learn about him. It was not his eating that defined him but his will." [GQ]
