Citing examples like Alinea, Moto, and Schwa, he calls Chicago "the most progressive restaurant city in the country." On Chicago-style pizza (that's caused a bit of controversy as of late), Batali said: "I love Chicago pizza. But it is not recognizable as pizza you'd get in Italy. It's Chicago style. That doesn't mean it isn't delicious! But it's casserole. Or a tomato soup in a bread bowl." On having to wait 45 minutes for it to bake: "What does Chicago do? Drink? Eat? Have more carbs while they wait for their carbs?" [Tribune]
