Saturday's new episode of PBS's The Mind of a Chef is dedicated to Italian-cooking legend Marcella Hazan, who passed away in September at age 89. In this online exclusive, Hazan welcomed April Bloomfield to her home in Florida before her death to cook one of her classic recipes, a braised veal shank, which Hazan describes as "a big lollipop."
Bloomfield essentially acts as Hazan's prep cook, taking direction from the Italian cookbook legend — "I don't mind getting told off. Especially if it's Marcella Hazan," Bloomfield says — and learns Hazan's secret of never tasting the food. "No. I never taste. I smell," Hazan says, before instructing Bloomfield to add more salt.
