Last night on Jimmy Kimmel Live, René Redzepi continued his American media blitz to promote his new book A Work in Progress. In the 11-minute segment, Redzepi teaches Jimmy Kimmel and actor Idris Elba how to make the chocolate-covered chicharrones that they serve at Noma as a dessert because, as Redzepi explains, "Everybody loves the crispy skin of a mammal." (Except for Elba, who doesn't eat pork, oops.) Kimmel points out that Redzepi is "all business" in the kitchen right from the beginning, chiding Kimmel for not paying attention to the frying pork skins and telling him to hurry up when brushing them with chocolate.
Kimmel also asked Redzepi about Noma's fall to number two on the World's 50 Best list this year. Redzepi says the demotion was fine with him, but that it had inspired a "new energy" in Noma's cooks. He says, "Usually I was the one pushing forward and now the team has pushed me forward." When it comes to Noma's quest to regain the top spot, Kimmel has a pretty good idea: "You know what I would do? I would just go and put a rat in the other restaurant that won number one."
