Last week, James Beard-winning cookbook author and Portland, OR baker Ken Forkish opened Trifecta Tavern, one of the most anticipated openings of the Fall. Eater PDX takes a look inside and finds three concepts in one: a "grab-and-go pastry counter" a la Forkish's Ken's Artisan Bakery, a "90-seat restaurant/tavern," and "a bar stirring up classic cocktails." The design is meant to evoke "big-city taverns" with exclusively booth seating, leather bar stools, marble counters at the front pastry case, and little decor except for large mirrors in the dining room. The menu, meanwhile, makes it clear that Trifecta's a "baker's restaurant" (think bread trolley), and plenty of dishes come from the wood-fired oven.
