Here's a teaser for legendary chef Ferran Adrià's upcoming seven-volume book collection elBulli 2005-2011. Published by Phaidon, the massive collection condenses the famous catalogs of elBulli, and is sort of like an encyclopedia of the restaurant's final years (not be confused, of course, with Adrià's massive culinary wiki Bullipedia).
The video below — the first in a series that will be released over the next few months — dives into the inspiration for and making of Mentholated Pond. The 2009 frozen dessert recipe is one of 750-plus in the collection and uses water vapor to capture aromas. When the finished dish is presented to the diner, a thin layer of ice is cracked, releasing chilled water vapor that carries aromas of mint and tea, transforming those ingredients into "a sensory experience." It's a stunning presentation. elBulli 2005-2011 will be released in March 2014 (pre-order here). Below, the video:
