In the newest installment of Vanity Fair's "Food Snob's guide," the Snob's Dictionary traces the welcome emergence of the heirloom turkey, a.k.a. the snob's answer to the "tyrannical Butterball-fueled reign" of "Large White" frozen Thanksgiving turkeys. Described as the "wattle-fowl equivalent of heirloom produce" — complete with J. Crew catalog names — heritage birds are the ideal fowl for snobby Thanksgiving tables, or for anyone who actually enjoys that familiar "turkeyish" flavor. Go, watch:
