Here's an interview with food critic Andy Hayler, who claims to have eaten at every single 3-star Michelin restaurant in the world. On the variations from country to country: "There are very distinct differences between the way the countries are assessed... The most egregious place is Hong Kong, to the point where I think it's really devaluing the Michelin brand." According to Hayler, back in 2004 there were 49 3-star restaurants (all in Europe).
