Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Here are three preview clips from the upcoming Copenhagen episode of Parts Unknown. The first clip takes place at Noma, which host Anthony Bourdain calls "the place where René Redzepi pretty much changed the whole world of gastronomy." Redzepi is seen running the kitchen while Bourdain enjoys a meal in the dining room with Cook It Raw! founder Alessandro Porcelli. In the second clip, Bourdain and Redzepi visit a farm together where there is a mix of wild and cultivated produce. In the third, Bourdain goes drinking and samples a famous Danish late night dish: the John's Hotdog deluxe. The episode airs this coming Sunday, October 6. Go, watch:
