Chef Alex Atala, whose Sao Paolo restaurant D.O.M. is ranked #6 in the world, is touring said world to promote his new cookbook, which means he's fielding a lot of questions about the particulars of Amazonian cuisine. Here, he talks to Bloomberg television about the unique nature of the Brazilian Amazonas region, which remains "a mysterious place" to most diners. "People are very curious about [it]... maybe we're not the most famous Amazonas, but everybody has an image of it... but nobody knows the flavor," Atala says.
While Italy has its familiar ingredients like mozzarella, basil, and tomatoes, Atala argues that Amazonas can be similarly represented in just a few ingredients, like tucupi (a fermented milk with herbs). Go, watch:
