In this new video series from Eater NY, Joshua David Stein embraces the idea of "Amateur Hour," attempting to learn the secrets of the food industry's most specialized artisans. (As the introduction notes, "failing spectacularly" is often part of the process.) In the debut installment, Stein visits the Long Island City "caves" of Murray's Cheese, where the famed cheese is aged and tested. "You will never truly know a man until you eat stinky cheese with him in his own cave," Stein says, before launching into some salsa dancing and then visiting Murray's Cheese Shop at Grand Central Station.
