Over on Eater NY, culinary encyclopedia Robert Sietsema launches a new video series that sees Sietsema revealing "the secrets of unexplored corners of the New York food world."
First up: a look at the hand-pulled noodles at Chinatown's Super Taste, where "noodle master" Steven Yan introduced the city's first-ever version of Lanzhou hand-pulled noodles just eight years ago. The noodles — described as "supple, rich-tasting, and firm to the tooth" — are freshly made right before boiling, and as Sietsema narrates, Yan took a one-month apprenticeship in Lanzhou noodle-making, which lead to a "full year" of noodle-pulling before achieving mastery.
