Watch Daniel Patterson Go Foraging & Create New Dishes

Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

Here are videos of chef Daniel Patterson of Coi in San Francisco foraging and then creating a dish with the ingredients he finds. Produced by Breville, the first video finds Patterson in a California forest near the ocean. He explains how he tries to connect with people from California by "using plants that are already here" to create "an expression of the physicality of the place and an expression of the culture of the place." In the second video, he explains the origin of the dish Prather Ranch Beef Encrusted in Lichen, and demonstrates how he forages for lichen. Back in the Coi kitchen, Patterson turns the lichen into a powder and finishes the dish, calling the taste "very familiar and strange at the same time." Go, watch:
