Welcome back to Sound Bites, Eater NY's original video feature in which footage of New York City's most badass chefs crafting their signature dishes is paired with tunes from up-and-coming musicians. Regarding the volume: turn it up.
In the clip above, executive chef Gavin Kaysen of Cafe Boulud in NYC prepares Tournedos Rossini, a classic French dish made with beef tenderloin, foie gras, and truffles. Kaysen prepares his own take on the dish, resulting in a modern and decadent-looking plate. The song is Twin Sister's "Meet the Frownies," remixed by the Brooklyn band Snowmine. Hit play on the video above to watch Kaysen prepare the dish.
