Behold, the dining room that will soon be the new home of San Francisco chef Joshua Skenes' two-Michelin-starred Saison. Eater SF got a look inside at the restaurant's one-of-a-kind dining room that has "an open kitchen that effectively makes every one of the 18 seats a chef's table." As Skenes explained earlier this week, "We could do 50 seats in this space, no problem. But that doesn't allow us to cook the way we want to cook... I think quality doesn't scale after a certain point."
This new iteration of Saison also has a 5,000-bottle wine cellar, a bar for its first-ever cocktail program and, of course, the signature wood-burning oven. And as Skenes continues to strive for that third Michelin star, Saison offers just an 18-20 course tasting menu for $248. It opens tomorrow.
