Here's a short episode preview of The Mind of a Chef's "Smoke" episode which highlights Kansas City barbecue institution Oklahoma Joe's. In the segment, the restaurant's marketing director Doug Worgul gives the pitch on the place and explains how they make their famous burnt ends, the crispy, crunchy points of the brisket. "It's a rarity, like finding a pearl in an oyster," says Worgul as the pitmaster slices the juicy, crispy, caramelized end result. Go on, watch:
