Asking chefs for restaurant recommendations is not a new thing, but rarely has it been done as extensively as in Phaidon's new Where Chefs Eat restaurant guide book. The 714-page book, which will be joined by a Where Chefs Eat iPad/iPhone app later this month, is international: it's heavily Europe-focused, but there are also recommendations here for North and South America, Adia, and more. For restaurant picks, Phaidon talked to chefs from all over the world, including Ferran Adrià, Daniel Boulud, Sean Brock, Eric Ripert, Massimo Bottura, David Chang, Gabrielle Hamilton and many, many more.
Below, three chefs — Jason Atherton, Mario Carbone, and Alex Raij — discuss why they recommended some of their picks for the book. If that's your thing, Phaidon has a bunch more of these interviews available on YouTube. Where Chefs Eat is out now (order on Amazon), keep an eye on the book's website for the iPad/iPhone app release date.
