Watch Bocuse d'Or Winner Rasmus Kofoed's MAD Talk

Here's Rasmus Kofoed, chef/co-owner of Copenhagen's Geranium and a gold medal winner for Denmark at the 2011 Bocuse d'Or, speaking at this year's MAD Symposium. As Daniel Boulud says in his introduction, "Rasmus has done the most ever done by a young chef in this competition." (In addition to his gold, he also won bronze in 2005 and silver in 2007.) Says Kofoed of his competitive nature, "I began to realize I could only be satisfied in my life if one day I could win the biggest ego trip competition, the world championships of cooking, the Bocuse d'Or." So how did he do it? Lots and lots of practice, and a couple of conversations with a beet root.
