Massimo Bottura Wire

bottura175.jpgItalian chef Massimo Bottura (Osteria Francescana, Modena) does a long interview with the BBC. On authenticity and tradition: "Everyone talks about authenticity but I am not sure that is really what they are aiming for? it almost seems like copying from someone else's test and not thinking things through properly... If traditions are put under glass they stagnate. People forget about them and they are lost forever. By keeping them actual and contemporary, there is a chance that they will be passed onto future generations..." [BBC]
