Here's White House pastry chef Bill Yosses giving his lecture at Harvard for their 2012 Science & Cooking lecture series. Yosses talks White House gardening — specifically on the honeybees and preventing hive collapse — for a good chunk of the lecture, but then it's on to the pretty stuff. Focusing on crystallization and phase changes, Yosses walks through pastry decoration, White House style: Olympic torches to top tarts for banquets, blown sugar-glass apples, that kind of thing.
