Here's Baking Out Loud by Hedy Goldsmith, pastry chef at Michael's Genuine Food & Drink in Miami and Grand Cayman. Goldsmith is known for her punched up takes on childhood favorites: think Fig Newton's ("Fig New T's") with anise and red wine in the filling, or made-from-scratch Tootsie Rolls ("Tootses") made with high quality chocolate. But Goldsmith doesn't stop there. The book also includes recipes for grownup treats with bold flavors like black licorice ice cream, maple flan, and tangerine campari sorbet. Baking Out Loud comes out from Clarkson Potter October 2 (pre-order on Amazon). As noted in this year's Fall cookbook preview, 2012 is shaping up to be the year pastry chefs get their due.
