Here's New York chef Wylie Dufresne giving a talk at this year's MAD Symposium in Copenhagen. After an introduction from David Chang in which Chang describes him as a "chefs' chef," Dufresne takes the theme of appetite and applies it to knowledge. What is the chef's creative process, and how does a chef come up with new ideas? Below, Dufresne challenges the idea of "because it's always been done that way" and makes an argument for chefs sharing ideas: "There will never be a universal way of cooking, but information will always be universally useful."
