Chicago chef Charlie Trotter, who's closing his restaurant to attend graduate school, announced the lineup for his final final dinner on August 31. They talk about his cookbooks, music, vegetables, and foie gras: "We stopped serving foie gras in, I'm going to say 1998 or thereabouts... I had at that point in my life visited three different foie gras farms... And what I witnessed was not pretty... I just decided, 'Nah, I can't support this.' But never said a word about it."
