There's some crazy intel on the restaurant that opened in 1950, including the fact that Conrad Hilton wanted to open Canlis restaurants around the world. To get out of the deal, founder Peter Canlis "flew down to Beverly Hills, got drunk, crashed a Hilton board meeting and cussed everybody out." Also: third generation and current owner Brian Canlis ran "the lounge for Air Force One while enlisted in the military" and used to make Otis Spunkmeyer cookies for George W. Bush.
