The Southern Foodways Alliance is holding its annual Symposium October 19-21 in Oxford, Mississippi, and they've just announced registration for members will begin August 1. (These things have a tendency to sell out really, really quickly, so mark your calendar.) This year's theme is "Barbecue: An Exploration of Pitmasters, Places, Smoke, and Sauce," and in honor of such the cartoon below explains the different regional types of barbecue across the South.
