Beginning with August 2012 bookings, Grant Achatz's three-star Michelin Chicago restaurant is moving to a ticketing system similar to the one used by his other restaurant Next. Alinea is also adopting variable pricing that "will vary between $210 and $265 depending on the day of the week." Calling it "dynamic pricing," co-owner Nick Kokonas says that "There will also be some $185 prices out there. And some $240 7:30 weekday tables."
