Here's a clip of an interview with chef Eric Ripert that appears in the special features section of A Matter of Taste: Serving Up Paul Liebrandt, which was released on DVD last week. In this particular segment, the Le Bernardin chef talks about how he was a bad student, and how bad students in France back in those days would end up being sent to cooking school. "They thought," Ripert says, "that if they put you in a culinary college at least you'd have something to eat."
The DVD also includes interviews with Thomas Keller and Heston Blumenthal which center around the struggles of young cooks, as well as two videos of Liebrandt plating dishes.
