Amateur Gourmet blogger Adam Roberts has announced details about his upcoming second book, Secrets of Great Chefs, out this September from Artisan (pre-order on Amazon).
Roberts trailed 50 different chefs for the book, including (deep breath) Nancy Silverton, Harold Dieterle, Vinny Dotolo & Jon Shook, Sara Moulton, Jonathan Waxman, Susan Feniger, Tony Mantuano, Tom Douglas, Anita Lo, José Andres, Hugh Acheson, Naomi Pomeroy, Marco Canora, Elizabeth Falkner, Michel Richard, Michael White, Daniel Patterson, and Roy Choi, and shares tips from the masters "filtered through the sensibility and the reality of a home cook."
Roberts tells Eater researching the book was "basically an exercise in wish fulfillment," and that readers will be surprised how forthcoming the chefs were. When asked for stories about working with the chefs, he says:
"Where do I begin?! Michael White yelling at me for calling his pasta "noodles"? Jonathan Waxman standing with his arms crossed while I cooked the entire staff meal at Barbuto with him watching over my shoulder? Elizabeth Falkner blindfolding me so I could taste her bon bondage bon bons?"
After learning dishes in restaurant kitchens, Roberts tested the recipes at home. He says, "It totally changed the way that I cook at home. Whereas before I was somewhat timid in the kitchen, now I tackle my kitchen tasks with great ferocity and verve." Secrets of Great Chefs contains 150 recipes, 400 color photos and comes out September 10. Here's the book trailer and the full list of chefs:
