Redzepi: Vegetables Can Be the Lead Singer/Guitarist

Scandinavian dreamboat/#1 chef in the world/Time coverboy René Redzepi thinks vegetables are the new rock. The Noma chef tells Fine Dining Lovers the next big thing in food is "the idea of eating more plants and vegetables not being a garnish but being the lead guitarist or the lead singer of a meal." Who else is convinced vegetables are the new hotness? Mario Batali, Roy Choi, Alain Ducasse, José Andrés, Gail Simmons, and others. Manly meat loving men of the world can relax, though: Fort Worth chef Tim Love is pretty sure the whole thing just a media conspiracy. Here's the video:
