Chef René Redzepi tells the London Evening Standard his plans for the Noma pop-up in London: "It will be a menu consisting of food from here, of course — only with our ideas. Maybe we will try to do the classics, but with British ingredients... On the top of Claridge’s, where we just were for the photoshoot, we found some goosefoot. It tastes like spinach, but better, and it was growing up there on the terrace." [LES]
