Chef Gabrielle Hamilton, on the road for her book tour, notices that restaurant workers don't wear uniforms anymore: "Cooks don't wear cook clothes except in fine dining. They'll be in T-shirts and cargo pants and may or may not have their hair pulled back. It's casual Friday at the office... At some restaurants when I was traveling I wasn't sure who was the server and who was the customer or the delivery guy." [Papermag]
