Mid-week reviews: Pete Wells was really into the flavors at New York's RedFarm, writing, "All the flavors have been turned up as high as they can go...the food goes to 11." Michael Bauer checks out the Western small plates served dim sum style at State Bird Provisions in San Francisco, as did Jonathan Kauffman. (The former says the concept is "destined to be copied from coast to coast," while the latter says the food is "among the most intuitive cooking happening in San Francisco.")
