Watch Sean Brock Cook Pig Ears on Bizarre Foods

Things are coming up BROCK these days — last week Charleston chef Sean Brock was on Charlie Rose, and last night the Charleston episode of Andrew Zimmern's Bizarre Foods aired on the Travel Channel. In the kitchen at Brock's restaurant McCrady's, Brock presents an Ossabaw Island Hog (destined for a terrine) and prepares his Crispy Pig Ear Wraps from his restaurant Husk (Brock says he's bought 2,600 pounds of pig ears in the last year). Brock also prepares his Charleston Gold Rice. "When you eat it, you taste history" said Brock. "You taste that era, and you taste the preservation techniques."
