Dufresne, Barber, Veyrat Added to Redzepi's MAD Lineup

Noma chef René Redzepi and the organizers of MAD have released the final list of speakers for their second annual symposium (see Eater's report from the event last year). Among those added to the lineup are Wylie Dufresne, Dan Barber, Marc Veyrat, and several academics and environmental experts. This rounds out a roster that already included chefs Ferran Adrià, Fergus Henderson, Massimo Bottura, and Enrique Olvera.

As previously reported, this year's symposium will center around the word "appetite," which "has been chosen due to its evocative meaning and fundamental importance to our work as chefs," according to Redzepi. "We would like the audience to consider its myriad of meanings as well as its implications for both our professions and our lives."
