Operatives at the Nordic Food Lab, the small research and creativity facility next to René Redzepi's Noma, have posted a detailed essay about their aims and methods. In a nutshell: "We are able to concoct as many as 20 or 30 individual and combinations of flavours per day. Some of these will work in terms of their deliciousness, most will not.
