Mid-week review time: Pete Wells drops two stars on New York's Acme from Mads Refslund, one of the founding chef of Noma (also see the back story on five dishes there). Jay Rayner bemoans the two hour time limit he was given with his reservation at Quo Vadis in London, without which the restaurant would "be pretty much perfect." Jonathan Kauffman finds the food at San Francisco Bouche "left me more puzzled than satisfied."
