Oddly, a whole bunch of the supposed "critics" — Andrew Knowlton, Josh Ozersky, Robb Walsh, Gael Greene, John Mariani, and Jeffrey Steingarten — don't actually write formal restaurant reviews for any publication (unless you want to count Greene's email newsletter). Every single "top" chef was granted anonymity, which is a really great way to make shit up. [TDM]
