On the latest episode of Eric Ripert's Reserve Channel series Avec Eric, the Le Bernardin chef ventures out to Los Gatos, California, for a tour of the famous garden that supplies his pal David Kinch's acclaimed restaurant Manresa. The two chefs and gardener Cynthia Sandberg geek out for awhile about heirloom tomatoes that Ripert says "looks like a sunset in California" on the inside, the difference between vegetables straight out of the garden and those you buy in a store, and they find the perfect pumpkin pie pumpkins.
Ripert also samples a few Manresa dishes that he deems "close to perfection" and Kinch waxes on about growing as a chef, saying, "When we're young cooks, what we do is we're always putting one more thing on the plate... But the older you get and the more confident you are and the more you realize that really what nature gives us is really the key to what we do, it's what can we take off the plate?"
