Watch Four New Videos From Noma's Test Kitchen

Here are four videos just released by chef René Redzepi's Noma, in Copenhagen. The footage offers a detailed look at products and processes Redzepi and operative Lars Williams have been talking about for a while: a miso made of yellow peas, a garum that uses grasshoppers, lacto-fermented plums, and a yeast petit four. The footage was filmed above the restaurant, in Noma's fancy new test kitchen and research and development area. As previously reported, it used to be a banquet area, but Redzepi turned it into a multi-use space that includes sleek, spacious tables for staff meals, an office area, an herb garden, and a test kitchen. Here are the videos:
