On last night's episode of Treme, chef Janette Desautel (Kim Dickens) is struggling with her new partner/restaurateur Sam Robards (Tim Feeny). In the Anthony Bourdain-scripted scenes, he pitches her the idea of brunch (and not just a brunch, but a dreaded jazz brunch). After Desautel says she's going to pull the wildly popular crawfish ravioli off the menu, he offers her frozen crawfish. "No. No fucking frozen crawfish, ever," says Desautel. "It is a seasonal special. People will look forward to it all year long."
Later, she did the food at a charity event, to which Robards objects because she used a banner that had the restaurant's name. "Read your contract. I own it," he says. "Desautels. On St. Charles. On Frenchman Street. In Houston, or San Antonio, or bumfuck Texas. It's mine... Let me explain something to you, chef. This restaurant goes on with you, or without you. That name on the door stays on the door... Who gets hurt when you walk out that door? Not me. We go on. What happens to you, do you think? Don't fuck with me, chef. I wrote the book."
And then later, she sees a billboard on a streetcar:
