Last night, David Chang was on Late Night With Jimmy Fallon to talk about the forthcoming Chinatown issue of Lucky Peach and make a dish that was "Italian in flavor but using Asian ingredients and techniques," such as chickpea as a substitute for parmesan. Chang explains, "We're trying to do an unveiling of Chinese culture and food in America," in the magazine's latest issue, and he jokes, "I'm trying to base my bet that Chinese food is the precursor to Italian food."
Chang and Fallon also rave about the mad science of Momofuku Milk Bar's Christina Tosi and Chang talks a little bit about the Momofuku empire's Toronto expansion in a three-level space that "looks like an Apple store." Finally, the Momofuku empire is doing a series of pop-up diners tonight in New York City for Hurricane Sandy relief. "We just need to support the American Red Cross," said Chang. "It's tough down there under 39th Street. When the power gets on, please support the restaurants and all the mom and pop restaurants. They're what make New York New York, I think."
