Thomas Keller's Ad Hoc Adds a Full Liquor License

Thomas Keller's family style Yountville, California restaurant Ad Hoc is getting liquored up. The restaurant, which until now served only beer and wine, has added a full liquor license and thus will begin serving cocktails and straight spirits on October 11. GM Josh Blackman, Assistant GM Jessica Pinzon and Bar/Dining Room manager Christian Schnurr have developed cocktails which apparently "reflect the warmth, humor and accessibility" of Ad Hoc and include a Dark and Stormy as well as something called a Thyme Wasted: light rum, crème de violette, lime juice, thyme and edible flowers. Cocktails are $12 a pop, but a glass of spirits will only run $8 to $12.

The French Laundry, Thomas Keller's three Michelin star Yountville restaurant, also only has its beer and wine license for now, although a full license is in the works. Along with the Ad Hoc liquor license, the restaurant's boxed lunch project Addendum will also start featuring a selection of beer and wine. Yountville, CA –Thomas Keller's once-temporary-turned-neighborhood fixture Ad Hoc announces the launch of a new bar program on Thursday, October 11th. The family-style restaurant recently received a full liquor license and is excited to offer fans and new visitors, alike a variety of curated cocktails and spirits to complement the daily rotating four-course prix fixe menu.

"Whether it's a cocktail to toast a special occasion, or a sip of whisky at the end of a long day – now we've got the refreshment to complete your idea of the perfect meal," says General Manager Josh Blackman. Highlighting a focused selection of spirits, tinctures, bitters and mixers, Assistant General Manager Jessica Pinzon and Bar & Dining Room Manager Christian Schnurr work with their team to devise a list of proprietary cocktails that reflect the warmth, humor and accessibility of Ad Hoc's dining program, including their crowd-pleasing classic the Dark & Stormy with black rum and ginger beer and such salutes to the Napa Valley as, Thyme Wasted – a sweet & savory blend of light rum, crème de violette, and fresh lime garnished with Ad Hoc garden thyme and edible flowers served up in a martini glass. Cocktails are priced each at $12, with spirits ranging in price from $8 to $12.

Ad Hoc continues to offer an eclectic and wide-reaching international list of wine and beer to bring out the flavors of hearty, comfort food served daily such as braised beef short ribs, meatloaf & mashed potatoes and of course, the popular buttermilk fried chicken which tops the menu every other Monday and has since inspired a Thursday – Saturday boxed lunch takeout project called Addendum in its own backyard. Addendum too, now features a small, rotating selection of beer and wine to enjoy with its picnic meal, especially refreshing in the crisp, early-Fall weather currently gracing Yountville.
